Are J.A. Henckels Four Star Knife Sets Forged?
For Christmas I received a J.A. Henckels Four Star Knife Set with a wooden engraved box. I am starting my culinary school this semester and I am building up my case... I just wanted to know are the Four Star Knives forged? Or are they stamped? Because my moms Professional S knives are sooooo much heavier than my knives. And besides that, usually in a forged knife, you can see the blade all the way through to the end of the handle. (My set came with a Chefs Knife, a Paring Knife and a Sandwich / Utility Knife)

- I am a former chef and have a number of Henckel, Victorinox and Wurstof Trident knifes, old knives will be heavier than new one as the amount of carbon steel in them was more prevelent, as time has gone on they have remodelled the steel mix for the knives. Only the real cheap ones are stamped from sheets of steel and then pounded, I have some Brazillian ones that are nice to. If your starting out the ones you have are fine, but I found that like at lot of other things in the culinary field, you have go with what you feel is right, hence the variety on knive I have. As time goes on you might add a larger french knfe, a slicer (long and thin for roasts and slicing smoked salmon), a variety of paring knives for small work, a simitar or butcher knife for cutting large pieces of meat, a cleaver is nice I prefer the chinese style. Alot has to do with the position you choose to specialize in, some station like the garde manger need more specific types. Good luck, I had a very rewarding career here in Canada and got the opportunity to travel and work in Singapore, Jamaica and a short stint in Tokyo Japan for a large hotel chain, make it fun and enjoy the work.
- Henckels knives are all forged except for the two lowest series of their Value Brand. Those are the Fine Edge Pro and Fine Edge Synergy Series which have stamped blades. Your set is from their Premium Brand line,all are forged.
