  1. I have several ones.However,the best for me are: 8 inch and 12 inch.The small one is for meat ( debone stuff) The big one to make some chopping.Don't get cheap ones.Get something good.Trust me.
  2. I think you mean what is brunoise, baton, etc. Brunoise is the smallest, a cube 1/8th inch on all sides. Check out this website for a demo on knife skills & cuts.
