  2. The price can vary from brand and quality level, and whether you want German or Japanese steel. Good knives should have good balance, hand feel, hand forged single piece blades, and be made of high carbon no stain steel. Start with a few basic pieces and build from there. A good basic set should include a chef's knife, a serrated bread slicing knife, a pairing knife, a deboning or filet knife, and a small serrated utility knife. Even the basic sets if chef quality will be pretty pricey. I spent a little more than $300 for my basic set, and that was 8 years ago. Chef's knifes can average around $150-$200 for one knife. Keep in mind, that you may spend more now for good knives, but they will last you a lifetime.

  5. They can run anywhere from about 30 dollars for a set to over 400 dollars for one really good chefs knive. !6 years in kitchens.
  6. If you're on a tight budget, go with Victoronix knives--they're relatively inexpensive since they're stamped, not forged. They've won out in several Cook's Illustrated tests. I think we bought our set for around $120 from cutlery.com, but it's been a few years.
