What Culinary Tour business or company would you recommend to use?

That is affordable and yet so worth the trip. Especially for those who have graduated from culinary school and would like to further their education through expereince. Anywhere in the world is open to me. Less than $3,000 for about a month sometime in August to October of 2008.
