Culinary School in 2 weeks, what to expect?

Hello, I'm starting my Culinary program in two weeks... I am very nervous because I don't necessarily have a lot of experience in the kitchen, would anyone who's had experience in a culinary school give me any tips on what to do to stay in good shape. Could anyone give me any info on what to expect? I am very excited but nervous at the same time!

  1. Don't stress too much about the first classes. They start you out with basic measurements (know your math!), knife handling, honing, cleanliness, HACCP or Serv-Safe, how to handle foods, preparation like dicing and slicing. It's more book learning in the beginning. The cooking comes after you get the easy basics out of the way. Good luck! I wish I'd taken culinary!
  2. Don't be nervous. Just pay attention and soak up as much info as you possibly can. Morre than likely they are going to make you concentrate on your knife skills and sanitation. Take your time and watch your fingers. The speed will come with time. Also make sure you have a comfortable pair of shoes because you will spend alot of time on your feet. Good Luck.
