1. I can't emphasize the Culinary Institute of America enough! It is the best in the world. Although you may just be paying money for the name, it is that name that will get you the jobs. I used to stress about getting into CIA, but then I realized almost everyone gets in if you pay. They have two campuses one in CA and one in NY. You can get degrees from a certificate to a bachelors. It is really the best investment you'll ever make! The teachers are top notch as well. Email me if you have other questions!
2. You really can't go wrong going to a Le Cordon Bleu culinary school, which are all over the country. I don't know where you live, but the Scottsdale Culinary Institute in Scottsdale AZ is amazing and has a great reputation in AZ. I would check them out and see if this kind of education is right for you. I know they have a great Pastry Arts program.
