What foods make filipino cuisine sour and salty?

  1. ive lived in the philippines for 5 yrs now, and i know that not all filipino foods are sour and salty.. filipinos like using vinegar as an ingredients or just as condiments. this what makes them sour. they have these "kilawin" were they get some raw meat, whether it may be fish pork beef or squid and they just shower it with vinegar and its ready to eat..they even have what they call as "Paksiw" were they simmer fish in just vinegar some salt.. filipinos like dried fish, i guess its salty.. are you a Filipina?

There are several things that Filipinos use to make food sour or salty For Salty: There's SOY SAUCE BAGOONG (fish paste or shrimp fry paste) there are several kinds but all are salted and fermented for a while. PATIS (fish sauce) this is the liquid that floats on top of fermenting bagoong, it's skimmed of. TUYO (dried fish) although this is a viand in itself we include this as an ingredient in vegetable dishes to add flavor. And of course SALT. For Sour we use: SUKA (vinegar) again there are many kinds depending on what was used to make it. KALAMANSI (calamondin) this bitter/sour mini-orange is picked when still green and its juice is squeezed over whatever you like sour SAMPALOK (tamarind) green tamarinds are boiled and mixed with meat, fish or shrimp and other vegetables to make sinigang (sour soup). Sometimes tamarind leaves are used. To make sinigang (sour soup) we also use KAMATIS (tomatoes), BAYABAS (guava), and SANTOL (i don't know the english name but this site offers more info on this fruit http://www.hort.purdue.edu/newcrop/morton/santol.html
  3. Sinigang is a very delicious sour & salty dish. You can find the little seasoning packet at a commissary or asian market. It's called Mama Sita's.
