I need help starting a travel tour operator company to mexico specializing in culinary tours? I'm looking for contacts so I can organize these tours, I need chefs/regional cooks and lodging contacts. I'd like to keep it true to the cuisines of the regions, and would like to eventually have tours to all six of Mexico's culinary regions (including Oaxaca, Veracruz, etc) and later expand to the Caribbean. I have a few contacts already, but the more I can get, the better. I plan to offer two types, one for people who just want to have some cooking classes in authentic Mexican cuisine and learn about the culture and area and another for chefs and culinary students with a more intense focus on learning the regional cuisines. Can anyone help out there! Thanks. Terri
Have you ever gone on a culinary and/or cooking class tour abroad? This Q was not seeing much action in the travel section, so I thought I'd try it here. There are a lot of these tours in France and Italy. A few in Tuscany caught my eye. You are taught to choose ingredients and cook some great meals along with other more general sightseeing. Has anyone ever done this? What was your experience or opinions? Thanks!
Why do US onions weep more than I do when peeling them? This is a serious question. US onions contain far more water than any others I have come across in my culinary travels. They exude vast amounts of liquid and one has to fry them for ten or even fifteen minutes at high heat in order to persuade them to brown. (Normal onions should be able to brown in five minutes.) Are they being injected with extra water by farmers to make them weigh more? Does anyone have any inside knowledge of this? If they are being injected, why is nothing being done about it? Apart from infuriating the person trying to cook with them, they are wasteful of energy, as one has to fry them for so much longer. No, I'm not confused about varieties. I live in a country where all vegetables are imported from the USA and so I am familiar with the different sorts. And they are all more watery than those elsewhere!
What is your WEIRDEST CULINARY EXPERIENCE? It can be at home or while travelling abroad but it should be an experience which you have gone through youself! It could be food that you have eaten or perhaps the surrounding that you were in while dining.... p.s: i live in asia and hear and see all sorts of 'weird' foods..my 'weirdest' experience would be the durian fruit as it has this horrible stench coming out. haha not very brave i know! ;)
Cost of Baking & Pastry Arts-Cordon Bleu Culinary School Pasadena? Does anyone know the approximate cost of this 30 week program. I tried getting information from the school but they decline to give me any of this information without setting up a meeting. I would really like to attend this school, but can't afford to travel to California just to find out the cost of attending the program. I am more than 1000 miles away. Thanks for any help.
Does anyone in italy know a good italian/english baking/culinary school in italy? Hey, I would like to travel to italy, and learn baking/pastry, but while researching online I've yet to come across one in italy that also allows americans/english speaking. I'm going to assume I didn't check enough, and I am just wondering if any of you italians or americans know anything about this. If you do please let me know.

Any unusual things to do in Venice or Munich? I'm traveling to Bavaria and Venice in March for 10 days. I don't like traditional tourist activities like churches, palaces, museums, etc. I do enjoy science topics, culinary activities, interacting with local residents, and staying away from hordes of other tourists. Any suggestions on how not to be bored out of my mind? Also, if you know of any good resources on the web devoted to what I'm looking for, I would be most appreciative and I'll raise my beer mug in your honor when I'm in Munich. Thanks!

Calling all chefs!!! I need help selecting knives!? I will be starting culinary school soon. I would like to buy my first set of REAL cutlery. I want good quality stuff...the kind you see gliding through veggies and meats on the Food Network. I am willing to spend up to 350-500 dollars on a set. I need the basics...chef's knife, boning knife, paring, bread, cleaver...at least. I want to still have these years from now. Please recommend a good cutlery set. Also, it must come in a handy travel case. Thanks in advance! I should add that I am in Panama. My knives will be coming from the states. I don't have the luxury of handling them before I buy them.
What can the odd couple do for their 7th year wedding anniversary? I will be 32 next month and my husband is 46. The vehicle we have is not dependable because it tends to cut off while you are driving it. We cant rent a car because we don't have a credit card and our debit card is no good because the bank account is at a negative reading (-$125.00), so traveling doesn't look like an option. We do have about $100.00 of pocket money saved up. We don't like the same hobbies. He enjoys Fishing from sunrise-sunset LITERALLY, home cooked meals that aren't fancy (he likes tender fried steaks and bar-b-qued pork), and action movies/sometimes westerns. On the other hand, I don't like most of the things mentioned. I enjoy slow dancing, fancy meals (culinary school taught recipies), walking along the riverfront at night while holding hands, comedy plays, and music for whatever the occasion. I won't go fishing with him soon because I've been going with him the last few months and I'm tired of being sweaty, and looking trees and water all darn day.

Honeymoon, holland america, first cruise, some feedback please? Hey, just preparing for our honeymoon, and was hoping to get some feedback. Our plan for our dream honeymoon is to head out on april 12 (the day after our wedding), from salt lake to CA and take a cruise on the Holland America Oosterdam, 7 day, mexican riviera. We managed to find a deal for a veranda room, which we are really excited about, for about 699$ (before taxes, tips, fuel charge, etc.) and flights for about 210$ (before taxes etc.)(don't worry we've added it all up, taxi too). One travel agent (younger lady) expressed the concern that we wouldn't like holland america because it had too old a crowd, and stuffy. Another (older lady) said we would love it. As for us, we aren't huge party people. We don't drink, our preferred dance is swing & ballroom, the library & culinary arts center's, & the art are a lot more attractive to us. We don't mind dressing nice, and we love older people. The cruise got dinged for lack of kids entertainment & shore excursions, but what do we care?
can someone translate this for me?? first answer best answer? Pizza, like so many other foods, did not originate in the country for which it is now famous. Unless you have researched the subject, you, like so many people, probably always thought Pizza was strictly an Italian creation. The foundations for Pizza were originally laid by the early Greeks who first baked large, round and flat breads which they "annointed with oil, herbs, spices and Dates." Tomatoes were not discovered at that time or, very likely, they would have used them as we do today. Eventually the idea of flat bread found its way to Italy where, in the 18th century, the flat breads called "Pizzas", were sold on the streets and in the markets. They were not topped with anything but were enjoyed au naturel. Since they were relatively cheap to make, were tasty and filling, they were sold to the poor all over Naples by street vendors. The acceptance of the tomato by the Neapolitans and the visit of a queen contributed to the Pizza as we know and enjoy it today. In about 1889, Queen Margherita, accompanied by her husband, Umberto I, took an inspection tour of her Italian Kingdom. During her travels around Italy she saw many people, especially the peasants, eating this large, flat bread. Curious, the queen ordered her guards to bring her one of these Pizza breads. The Queen loved the bread and would eat it every time she was out amongst the people, which caused some consternation in Court circles. It was not seemly for a Queen to dine on peasant's food. Never the less, the queen loved the bread and decided to take matters into her own hands. Summoning Chef Rafaelle Esposito from his pizzeria to the royal palace, the queen ordered him to bake a selection of pizzas for her pleasure. To honor the queen who was so beloved by her subjects, Rafaelle decided to make a very special pizza just for her. He baked a Pizza topped with tomatoes, Mozarella Cheese, and fresh Basil (to represent the colors of the Italian flag: Red, white, and green). This became Queen Margherita's favorite pizza and when word got out that this was one of the queen's favorite foods, she became even more popular with the Italian people. She also started a culinary tradition, the Pizza Margherita, which lasts to this very day in Naples and has now spread throughout the world. History has not made it clear whether Rafaelle began to sell this creation from his own pizzeria but it is known that the Pizza, in much the same form as we now know it, was thereafter enjoyed by all the Italian people. Variations began to be made in different parts of the country. In Bologna, for example, meat began to be added into the topping mix. Neapolitan Pizza became quite popular and it brought garlic and crumbly Neapolitan cheeses into the mixture as well as herbs, fresh vegetables, and other spices and flavorings.About this time the idea of baking in special brick ovens came into existence and the bread, as it is today, was a rather simple combination of flour, oil, salt and yeast.Today we celebrate Pizza. February 9 is International Pizza Day and the Guinness Book of Records states that the largest Pizza ever made and eaten was created in Havana, Florida and was 100 feet and 1 inch across!

Can I have a representative appear in court for me If I live out of state.? I live in Chicago and had a Misdameanor warrant in Minnesota. This past week I traveled back there on a business trip to visit a Culinary Arts school I will be transffering to. I was pulled over and the officer asked did I know I had a warrant and I said yes and he asked did I have $300.00 on me, I did and he wrote me a ticket to appear in court November 06 2007 and he let me go. He also said if I can't appear in court call the number on the ticket. So my question is will I have to show up to court when I live out of state working and attending Culinary School because I have a very busy schedule also visiting other Culinary Schools I will be transffering to down the road. I can make the court date in late January but really don't know If the court will let me or can a representative do it in the court room and If I don't show up will another warrant be put out for my arrest again even though I just got rid of one. Thanks in advance.
Good Location To Live/Work In The UK? I am a 21 year old culinary graduate, and I have been offered work through my college in Canada. I can work in any UK city for 1 year. I will have to pay living expenses and that kind of thing. I was hoping people can help me out with telling me good places to live. I am looking for a place that isn't too expensive, has some things to do, close enough to other cities to do day trips and just a good safe enviroment. I have travelled the UK extensively and know the culture and what to expect so I just thought I'd ask the locals and get their input.
What should I do after highschool? Ok I'm a Senior and will graduate God willing as a pharcy tech in '09 but my real passion is in culinary and the performing arts. I've been thinking about joining the NAVY because my godmother's daughter is in it and she describes it as something great that pays for schooling and she travels the world. I aslo went on the website and they listed opportunities for culinary and music and sounds way too good to be true. So should I join or maybe just go to college? I mean the NAVY sounds pretty tough and I'll admit I am a powderpuff but the benefits sound amazing?
